TERROIR

The Côtes de Provence vineyard covers nearly 20,000 hectares. The vines run alongside the Mediterranean Sea. This position offers exceptional sunshine exposure, accompanied by the Mistral wind. The terroir is comprised of a complex geological profile with two key elements: limestone hills to the north-west and cristalline hillsides to the south-east.

VINIFICATION

Each grape variety is harvested at optimal maturity in order to ensure delicious balance in the wine. The harvests from each terroir are vinfied separately at low temperature. There is a short maceration or direct pressing operation, depending on the variety.

TASTING NOTES

Billette is a wonderfully typical Provençal rosé, with a bright colour and a bouquet of ripe fruit and white flowers. Fresh and elegant, it is as generous as the sunshine which floods the Provençal vineyards.

PAIRING

This rosé wine is a perfect partner for Provençal cuisine or Italian specialities, notably when slightly spicy or with olives or herbs.
